Asain Coleslaw

Asian Coleslaw (from Rachel Ray)

1/4 cup soy sauce
3 Tb rice vinegar
1/4 cup chunky peanut butter
7 cups shredded cabbage
1/2 cup finely chopped mango
1/3 cup finely chopped mint

Whisk soy sauce, vinegar, and peanut butter; toss with cabbage, mango and mint. Makes about 8 cups.
