Brussel Sprouts

Well, we all know they are healthy. Do you have any yummy recipes for them? I just made one tonight that is yummy.

Cut off rough ends, remove outer leaves (2-4), cut an 'X' on the "rough end" to even the cooking. Steam them for 5-10 minutes, do not over cook. When, bright green and fork tender, take off stove, put in sink and run cold water through them and the pot. cool both down and then soak the Brussel sprouts in ice water in the same pot to cool them down even more. While they are cooling, make this yummy dressing:


Whisk together:

6 T. olive oil
2 T. Dijon Mustard
4T. Red Wine Vinegar
2 t. honey or maple syrup
salt and pepper to taste

Pour over drained brussel sprouts into the same pot and put in fridge until chilled. Caleb, who is the pickiest eater I have, likes them a lot! They are pretty good. :)
